Howdy. We have a few cast irons and we love them. Frequent use for all kinds of things. My favorite is laying the griddle across 2 stovetop burners and cooking hot and fast with beef, eggs, veggies, etc.

I've used a griddle - do you use gas with the griddle? I'm always afraid of grease with gas stoves, which I know is silly.

However I enjoy a griddle for pancakes, french toast - I did it for smash patties once, but it was a lot of splatter. I have the Lodge 1 burner griddle, and 2 that can be flipped for a grill - I don't use the grill side tho, it's a real pain to clean.
 
We have an old electric from the 70s, the burners are raised metal pads which fit under the griddle quite nicely, they fit inside the rim of the griddle so actually make contact with the bottom of the griddle

I wouldn't do it with gas.

We will have to replace this ancient thing soon, we will probably get a flat cooktop, so our griddle won't work nearly as well.
