Icook roasts with potatoes, carrots, onions, and garlic, in a 12" dutch oven. Also cook ribs with garlic salt in the dutch. The meat just falls of the rib bones. The roast may take two to two and a half hours depending on size. Both beef or pork run about the same time. Ribs take about two hours or a little less.

Two to two and a half hours for a full roast is super fast for a Dutch oven! What temperature are you running yours at?
anyway, since you've got the roast and ribs down, the next thing you have to try in that Dutch oven is bread. The heavy cast iron gives you an incredible crust that you simply can't get in a regular oven.
You don't even need a fancy recipe, just search for Dutch oven no knead bread. It’s really a game changer
 
S & SI use a 12" dutch with a flat lid. The temp given is 350 with 17 briquets on the lid and 9 under the dutch, mine has legs that make it possible. I always use Kingsford and I rarely slow cook anything. Thanks for the bread idea.
