you guys have to try this! My sister found this amazing French Mac & Cheese recipe, and it's seriously a game changer! It's so much healthier than the regular stuff because the creamy base is actually sweet potatoes!
I'm officially obsessed. Here's the recipe:

Stuff You Need:
2 big sweet potatoes (peeled/cubed)
2 cups of milk (3.25% or unsweetened soy)
1 tbsp olive oil
1 cup (120 g) shredded cheddar
3 tbsp nutritional yeast (for that cheesy vibe!)
1 tsp Dijon mustard
1 tsp turmeric (for color!)
1 tsp garlic powder
3 cups (330 g) whole wheat macaroni
1 cup mozzarella OR parmesan for topping
Salt and pepper (to taste)

How to Make the Magic:
Boil the sweet potato cubes until they're super tender (about 10 mins). Drain and put them back in the pot.
Use an immersion blender to blitz the potatoes into a smooth purée.
Add the milk, oil, cheddar, yeast, mustard, turmeric, and garlic. Season it up! Cook this sauce over medium heat for about 3 mins, stirring constantly.
While that’s saucing, cook the macaroni until it’s al dente (7–8 mins). Drain it!
Mix the cooked pasta right into the sweet potato sauce. Spread into a greased baking dish, and sprinkle the top cheese on.
Broil for 4–5 minutes until the top is golden and bubbly!

Try it, guys, it's ridiculously good!
 
My Tiktok's been showing me feeds of cooking in cast iron ever since I searched about it. But whenever I see Dijon mustard, it's an automatic thumbs up. Okay, you got me. I'll try this recipe over the week.

I only use Greek yogurt instead of milk and also shredded cheddar in my recipe.
 
My kids love Sweet Potato Mac & Cheese and I also add 4 fresh sage leaves and 3/4 cup feta cheese.

You might want to add it to your recipe too.
